More prominent spine and bones. The horse will still get nutrition and such. It just has very skinny features.
Foliage covered. Mushrooms, plants, flowers ect. I like this one very much. Plants growing on a horse? WICKED
Spiked hooves; spikes coming of the rounded part of the hoof. Or spikes on back like a rooster, In the coronary band area?
Extra tongue- slithery like tongue too?
Extra eye/extra leg/ extra ear.
Flesh eating disease? –able to see muscles and bones. Maybe in patches that skin is removed. Looks like disingrated flesh. (think zombies- This wouldbe good for maybe a sort of undead look for charries.

I’ve wanted to come up with mutations for a while, so here are some really cruddy ones up there. I like my foliage covered one the best through OH OH, maybe it will change with the seasons too? I’m really liking this foliage one. –gives puppy eyes-

Just as an add on to what Hud said the first mutation, skinny horse, would be more readily explained by a disease or hormonal imbalance such as Hypperthyriodism than a mutation. Just in case you were thinkin of using that one.
